Brehm Vineyards serves as a bridge from grape growing to winemaking for small wine producers. The expectation of a particular grape from a given vineyard is always influenced by the vintage and harvest conditions. Once harvested, the expectations are replaced by reality. Winemakers may design the best wine from these grapes because the chemistry and quality of the grapes are known. The known are the most predictable. Grapes are available from freezer locations and through a network of distributors and stores.

We have the ability to harvest premium wine grapes at their peak potential for making fine wines. (Click Here for Grape Processing Information.) Once these grapes are harvested, we put destemmed black must and whole-berry pressed white juice into food-grade pails and freeze them. At this time, the grapes are in a state of suspended animation. It is now up to the winemaker to lead their must or juice towards the promised land, a bottle of fine wine.

These frozen grapes and juices are a known commodity. The brix, TA and pH of all grapes harvested are know and for many varietals, full juice panels are available. The winemaker now can make educated decisions on what type of wine they want to make. Blending of varietals to balance sugar or acid are now a simple choice rather than a labored calculation.

Virtual Vineyard Grape Offerings Pricing

Maintaining inventories of grapes in regional freezers close to you does save dramatically on transportation and availability. It is a concept we would like to continue and expand.

Brehm's Virtual Vineyard grapes are usually picked-up / shipped within 30 days of purchase. During the harvest season there will also be a price allowing storage until you can ship all your grapes under the same terms. This will include additional storage charges above the current prices.

Throughout the summer, fall and beyond, frozen grapes will be available for sale and shipping. Brehm Vineyards is also working with resellers throughout North America to make these premium wine grapes easily available to you. Some retailers have devised methods of shipping by UPS or FedEx. Some are warehousing in their own neighborhood. Frozen grapes have proven that extended storage does not cause any deterioration of quality. Brehm's Virtual Vineyard inventoried grapes can offer substantial advantages over fresh grapes.

Frozen grapes and juices are housed in commercial freezer facilities in the cities above. To pick up from these locations, please call us at 510-527-3675 to help you make the arrangements. For all of our commericial freezers, we must give 24-72 hours notice for customer pick ups. Once we have notified a freezer of your order, you will be given the freezers contact information. At that time, you will need to call the freezer directly to schedule your pick up.

Grape Processing Details

Whole Black Grapes are destemmed using minimal force that allows for more intact berries and less stems in the resulting must. 5 U.S. Gallons / 18.9 liters of must is then sealed into a food-grade pail and frozen to -4 degrees Farenheit. This volume of must represents approximately 55 pounds of whole berries. Each pail, once thawed, fermented and pressed will yield between 2-1/2 and 3 gallons of finished wine.

Black Grape Must can also be frozen in a liquid-tight fiber drum to a weight of 425 pounds of must, enough to produce 30+ gallons of finished wine.

Whole White Grapes are bunch pressed and 5.25 U.S. gallons of cold-settled juice is frozen in pails. After thawing, fermentation and gross-lees racking, your yield will be at least 5 gallons of wine per pail.

White Grape Juice can also be frozen in drums in a volume of 46 U.S. Gallons or Intermediate Bulk Containers in a volume of 210 U.S. Gallons.

Fresh Grapes, either as whole bunches, destemmed must or pressed juice, can be picked up at the time of each varietals harvest. For California grapes, our processing facility is located in Petaluma CA at Stage Gulch Vineyards. For Washington or Oregon grapes, our processing facility is located in Underwood WA at White Salmon Vineyards.
